Let’s talk chocolate powders. For a while I was buying the most expensive raw chocolate powder for my chocolate. I then came to realize that all you needed was for it to be non-alkalized which means that it’s just pure chocolate with the fat removed. Also chocolate is something that in my opinion should be cooked because it cuts down on all those jittery feelings that you get with raw cacao.
I used Young Thai Coconuts and cashews to add creaminess to the mousse and it worked out perfectly.
For the sweet I used maple syrup which is an ideal sweetener alternative. It tastes great in all recipes including savory ones. It’s also much healthier for you than brown sugar and doesn’t make your blood sugar spike as much.
I can’t stress just how much this tastes like real chocolate pudding. The best part is that the entire dessert is made out of super healthy ingredients.

- Meat from 3 Young Thai coconuts
- Juice from 1 Young Thai coconut
- ½ Juice of 1 Young Thai coconut
- ⅓ Cup raw cashews
- 1 Cup maple syrup
- 4 Tablespoons cocoa powder
- ¼ teaspoon salt
- Blend all of the ingredients in a blender very well.
- Then pour into a medium bowl.
- Place into the freezer for 30 minutes.
